The selection was determined entirely by a fan vote, resulting in a collection of what are supposedly the bakery’s greatest hits. While the menu includes a variety of interesting options, the Ice Cream Cake Sandwich Cookie was the one that piqued our curiosity the most.

The reason this cookie stands out to us isn’t because it sounds particularly delicious; rather, it’s because the concept seems somewhat bland and uninspired. Admittedly, it looks charming and appetizing, resembling a miniature cake constructed from sugar cookies, pink frosting, and sprinkles. Ultimately, we felt compelled to discover why this was such a highly requested returning flavor. We wanted to see if it delivers a surprising punch of flavor or if it relies solely on its appearance. Pros — As soon as I received this cookie, the appeal was obvious. It is adorable. It looks like a small, idyllic birthday cake, provided you swap out the traditional vanilla sponge for sugar cookies. Between the pink frosting and the rainbow sprinkles, the treat is charming and endearing, making it hard to resist ordering. However, the disappointment begins once you take your first bite. Regarding the frosting, it offers a creamier taste and texture than the standard buttercream, which is a welcome improvement. Furthermore, the cookie base is one of the least sugary options I have sampled from Crumbl in a long time. It is far from perfect, but the balance provided by a more mildly sweet sugar cookie was beneficial in every bite.

Cons — Where should we even begin? Unfortunately, this cookie was a struggle to finish. Beyond its aesthetic appeal, the experience is flat and one-note. The overall flavor profile is limited to vanilla and sugar, and when you take a bite containing all the layers, your teeth ache by the time you finish chewing. While the cookie itself was more balanced and less cloying than typical Crumbl sugar cookies, it still lacks any real depth of flavor.

Furthermore, I would not be surprised if the icing contained no salt at all, which is a significant oversight given that its only dominant characteristic is creamy vanilla. The supposed ice cream inspiration is reflected only in the texture of the frosting. Aside from that, there are no discernible notes of the ice cream cake this treat is meant to emulate.
